Ingredients
Meatballs:
- 1 lb Ground Beef
- 1 tsp Garlic Powder
- Sea Salt
- ¼ Cup Breadcrumbs
- 3 Tbsp Chopped Parsley
- 1 Egg
- 1 Tbsp Olive Oil
- 2 Cups Spaghetti Squash
- 1 can Tomato Sauce
- Sea Salt & Pepper
- Italian Seasoning to taste
- 2 cloves Garlic, chopped
- Combine Beef, Garlic Powder, Salt, Egg and Parsley in a bowl. Mix to combine.
- Add Breadcrumbs and stir. If too moist, add more Breadcrumbs by the tablespoon (don’t add more than 3 tbsp).
- Roll into meat balls and place on an oiled, rimmed baking sheet.
- Bake at 350° for 15 minutes, turn and bake for another 5 minutes.
- Meanwhile, cut Spaghetti Squash in half and remove seeds. Place in a large stockpot and boil until tender. About 20-25 minutes. Remove from water, drain & let cool.
- Scrape squash from the shell and place in a large skillet with Olive Oil.
- Add Tomato Sauce, Garlic, Italian Seasoning, Salt & Pepper and allow to heat through.
- Add Meatballs and stir to combine.
