Ingredients:
- 6 oz. diced chicken (cooked)
- 2 cups mixed vegetables of your choice (diced) - carrots, celery, onion, peppers, broccoli etc.
- 1 slice bread (cubed or crumbled)
- 1 Tbsp. olive oil
- Sea salt & pepper (to taste)
- 1 cup chicken stock - heated with a small amount of flour to thicken (about 1 tsp.)
- Sauté vegetables in 1/2 Tbsp. olive oil until tender. Season with salt and pepper to taste.
- Transfer to small casserole dish and add the chicken and the heated chicken stock.
- Sauté cubed bread in 1/2 Tbsp olive oil and season as desired.
- Place on top of chicken and vegetables.
- Bake at 350° until heated through.
