Ingredients:
Riced Broccoli: Place broccoli in a food processor and pulse until a rice like consistency has formed.

Ingredients:
- 2 cups broccoli, riced in a food processor (see instructions below)
- 1 cup quinoa, cooked
- 2 Tbsp olive oil
- 4 Tbsp lemon juice, freshly squeezed
- ¼ tsp chili powder
- 1 cup parsley, chopped
- ½ cup mint, chopped
- 2 green onions, chopped
- Sea salt & pepper to taste
- 6 Tbsp pumpkin seeds
- 4 oz Feta cheese
Riced Broccoli: Place broccoli in a food processor and pulse until a rice like consistency has formed.
- Place all ingredients (except pumpkin seeds & Feta) in a large bowl and stir to combine.
- To serve – top one serving with 2 Tbsp pumpkin Seeds & 2 oz Feta cheese
