Crock Pot Squash & Quinoa Soup

Ingredients:
- 18 oz Chicken Breast
- 1 cup Quinoa, dry
- 5 cups Chicken Broth
- 4 cups Butternut or Acorn Squash
- 2 cups Corn
- 1 (14.5oz) can Diced Tomatoes
- 2 cups Spinach
- 1 cup Red Bell Pepper, chopped
- 1 cup Onion
- 2 Tbsp Butter
- 2 tsp Garlic, minced
- 2 tsp Sea Salt
- 2 tsp Black Pepper
- 1 tsp Garlic Powder
- 2 tsp Chili Powder
- 1 tsp Paprika
- 1 tsp Onion Powder
- 1 tsp Cayenne Pepper
- Rinse quinoa and peel, de-seed and chop squash into small bite-size pieces.
- Put butter into the crock pot then add the chicken, quinoa, squash, corn, diced tomatoes (including juices), garlic and seasonings.
- Next pour in the chicken broth and stir to combine.
- Cover the crock pot and cook on high for 3-4 hours or until quinoa is cooked and squash is tender.
- Using 2 forks, shred the chicken in the crock pot.
- Separate into 6 equal servings and enjoy.
