Ingredients:
- 1 slice bacon (optional), cut into bite size pieces and cook until done. Drain fat.
- 1 1/2 tsp olive oil
- ½ cup onion, diced
- 1 clove garlic, diced
- ¼ cup of green pepper diced
- ¼ cup of yellow or red pepper diced
- 2 Tbsp tomato paste
- 2 Tbsp maple syrup
- 1 cup of water
- 2 cups of beans (cooked or drained from can)
- Saute veggies to soften in olive oil.
- Add tomato paste, maple syrup and water
- Pour beans and bacon (optional) into crock-pot on low.
- Cook on low 4-6 hours, or until reached desired consistency (Crock-pot temperatures may vary).
- Separate into 4 equal servings and enjoy.
