Ingredients:
- 2 Tbsp olive oil
- 1 cup zucchini, sliced into half-moons
- 1 cup green peppers, chopped
- 2 cups chickpeas, rinsed and drained
- 1 tsp cumin
- 1/4 tsp coriander
- 1/8 tsp cinnamon
- Sea salt and pepper to taste
- Heat oil in a skillet over medium-high heat. Add peppers and zucchini. Saute until softened.
- Add the chickpeas and spices. Cook until veggies and chickpeas are cooked through and browned in some spots, about 10 minutes.
- Divide into 2 equal servings.
