Cherry Walnut Salad
Cherry Walnut Salad
Makes: 2 servings
Each serving contains: 2- proteins, 1- carb, 2- veg, 1- fat
Ingredients:
- ¼ Cup Brown Rice, cooked
- 2 Tbsp Olive Oil
- 2 Tbsp Fresh Lemon Juice
- 2 ½ Cups Spinach
- ½ Cup Cherries, pitted and halved
- ¼ Cup Chickpeas, rinsed
- ½ Cup Red Onion, finely chopped
- ½ Cup Cherry Tomatoes, halved
- ½ Cup Artichoke Hearts, rinsed and quartered
- 2 oz Walnuts Chopped
- 2 oz Feta Cheese
- 6 oz Grilled Chicken, diced
- ½ tsp Sea Salt
- In a small bowl whisk the olive oil, lemon juice and salt. Set aside.
- In your large salad bowl add the brown rice and pour half of the olive oil and lemon mixture on top. Toss to combine.
- Add the spinach, cherries, chickpeas, red onions, tomatoes and artichokes. Toss to combine.
- Add chicken, feta and walnuts. Drizzle the remaining dressing on top. Serve.
