Cherry Chocolate Chip Ice Cream

Ingredients:
- 1 can full-fat coconut milk
- 12 oz bag frozen cherries
- 1 tsp vanilla extract
- 3 Tbsp honey
- ¼ cup mini dark chocolate chips
- Set aside a quarter bag of the cherries and dice remaining.
- Place the whole cherries that you set aside in a blender or food processor and puree.
- Add all of the liquid ingredients (coconut milk, vanilla and honey) into the blender or food processor. Blend medium speed for one minute.
- Stir in remaining chopped cherries and chocolate chips into the mixture (do not blend).
- Pour mixture into a loaf pan and freeze for at least 3 hours.
- Enjoy!
