Ingredients:
- 12 oz. Chicken Breast, thin cut
- Sea Salt and Pepper to taste
- 2 tsp Garlic Powder
- 1 Tbsp Italian Seasoning
- 3 Tbsp Olive Oil
- 1 tsp Butter
- 4 Cups Tomatoes, diced
- ½ Cup Red Onion, minced
- 2 Cloves Garlic
- 1/3 Cup plus 2 Tbsp Fresh Basil, chopped
- Balsamic Vinegar for garnish
- 2 Tbsp Parmesan Cheese, grated
- Season Chicken on both sides with Salt, Pepper Garlic Powder and Italian Seasoning.
- Heat 2 Tbsp Oil and Butter in a large skillet over medium heat. Add Chicken to the pan and cook until browned on both sides, about 8 to 10 minutes.
- While the Chicken cooks, combine the Olive Oil, Tomatoes, Onion, Garlic and 1/3 Cup Basil.
- Divide the Tomato mixture evenly among the Chicken Breasts and place on top. Sprinkle ½ Tbsp I Parmesan on each Chicken Breast and then garnish with 2 Tbsp Basil.
- Serve immediately!
