Ingredients:
- 1 small whole wheat tortilla
- 1 scrambled egg
- 2 oz feta cheese
- 1 tsp butter
- ¼ cup cherry tomatoes, halved
- 2 Tbsp avocado, diced
- Sea salt and pepper
- In a small skillet, scramble your egg in butter. Set aside.
- Warm the tortilla on the skillet for 1 minute and remove from stove top.
- Place the eggs in the tortilla and top with feta cheese, cherry tomatoes and avocado. Sprinkle with sea salt and pepper to taste.
