Ingredients:
- 1 Tbsp olive oil
- 12 oz ground beef
- Sea salt and pepper, to taste
- 2 cups tomatoes, chopped
- 1 cup onions, chopped
- 1 cup zucchini, chopped
- 1 Tbsp fresh basil, chopped
- 2 cloves garlic, minced
- ½ tsp crushed red pepper flakes
- 1 cup brown rice, cooked
- In a bowl, combine 1 Tbsp olive oil, tomatoes, onions, zucchini, basil, garlic and red pepper flakes. Set aside.
- Heat a large skillet over medium heat. Add ground beef. Stir and cook until cooked through, about 5 minutes (drain any excess fat).
- Stir in vegetable mixture and heat through, about 3-5 minutes.
- Divide into 2 servings and pour each serving over ½ cup brown rice.
