- 1 ripe banana, mashed
- 2 eggs
- 1 cup shredded carrots
- 1/8 tsp ground cinnamon
- 1 tsp vanilla extract
- 1 Tbsp coconut oil
- Heat coconut oil in a skillet on medium heat.
- In a separate bowl combine the mashed banana, eggs, shredded carrots, vanilla and cinnamon and stir until well combined.
- Pour the batter in the skillet and cook for about 1-2 minutes, or until lightly browned.
- Flip and cook the other side for another minute, or until completely cooked throughout.
- Serve immediately.
