Vegetarian Spinach Bites with Honey Turmeric Dipping Sauce

Ingredients:
- 1 cup raw unsalted sunflower seeds
- 1 cup onion, finely diced
- 10 oz frozen spinach, thawed
- 2 Tbsp fresh basil, finely chopped
- 2 cloves garlic, minced
- 1/4 cup parmesan cheese, grated
- 2 eggs
- 2 Tbsp butter, softened
- 1/2 tsp dried oregano
- Sea salt and pepper to taste
- 1/2 cup plain whole milk Greek yogurt
- 1/4 tsp turmeric
- 1 tsp honey
- 1 Tbsp fresh lemon juice
- 1/2 tsp sea salt
- Preheat oven to 375° and place the oven rack in the center of the oven. Line a baking sheet with parchment paper.
- Using a food processor or blender, ground the sunflower seeds into a flour consistency. Pour into a large mixing bowl.
- Drain excess water from the spinach using a dish towel or paper towel. Add the spinach to the bowl with the sunflower seeds.
- Add the onions, basil, garlic, cheese, eggs, butter, oregano, salt and pepper to the bowl. Mix until completely blended.
- Portion out the spinach bites into 1 1/2 inch balls using a tablespoon or melon baller. Place on the lined baking sheet.
- Chill in the refrigerator uncovered for about 30-60 minutes.
- Bake for 15 minutes or until lightly browned on the bottom. Flip the bites and bake for another 15 minutes.
- Serve with the honey turmeric yogurt dipping sauce.
- Use about 2 tsp of dipping sauce per 2 spinach bites.
