Ingredients:
- 1 medium sweet potato, baked and skin removed
- 3 eggs
- 1/3 cup coconut oil (plus extra for greasing)
- ½ cup honey
- 1 ½ tsp vanilla extract
- ¾ cup spelt flour
- 2/3 cup raw cacao powder
- ½ tsp sea salt
- 1 tsp baking powder
- Preheat the oven to 350°. Grease an 8x8 baking pan with coconut oil.
- Place the cooked sweet potato, eggs, coconut oil, honey and vanilla extract in the base of a food processor or blender.
- Blend until smooth.
- In a mixing bowl, combine the spelt flour, cacao powder, salt and baking powder.
- Blend until combined.
- Add batter to the prepared pan and bake in preheated oven for 20-25 minutes, or until a toothpick inserted in the center comes out clean.
- Remove the brownies and let cool completely.
- Cut into 20 equal servings.
