BBQ Chicken with Peaches Salad

Ingredients:
- 4 Tbsp olive oil
- 2 Tbsp red wine vinegar
- 1/ tsp black pepper
- ¼ tsp sea salt
- 2 cups fresh peaches, slices
- 4 cups broccoli slaw
- 12 oz chicken, grilled or baked and cut into strips
- ¼ cup GOLO BBQ Sauce (recipe below)
- 1 oz feta cheese (4 Tbsp)
- 1 large onion
- 3 cups tomato sauce
- 4 Tbsp tomato paste
- 2 garlic cloves, crushed
- 1 Tbsp paprika
- 2 Tbsp honey or maple syrup
- 3 Tbsp balsamic vinegar
- 1 Tbsp worcestershire sauce
- A pinch of sea salt and pepper
- 1 tsp chili flakes
- Add a little olive oil to a pan, add onion and cook on low for 5 minutes until softened.
- Add the rest of the ingredients and simmer for 3 minutes.
- Whisk together in a large bowl olive oil, red wine vinegar, salt and pepper. Add peaches and slaw to the mixture and toss to coat.
- Place chicken strips in a large bowl and toss with BBQ Sauce.
- Divide the peaches and slaw mixture evenly and top with chicken strips.
- Sprinkle with feta cheese.
