Have you ever heard of microgreens? They are also known as sprouts. A microgreen is any green vegetable or herb that has edible leaves and is harvested when the first set of true leaves sprout- also known as the coteleydon growth stage. Microgreens can be grown from any herb or vegetable, but the most common are cilantro, amaranth, arugula, radish, basil, beets, broccoli and kale.
There are numerous health benefits that come with consuming these sprouts. They are very high in antioxidants, they are easily digestible, and they are packed with nutrients. They also help to alkaline the body and contain oxygen that can ward off viruses and kill bacteria.
