
Coconut Beet Overnight Oats
We here at GOLO like to search for and provide you with fun, interesting recipes. Overnight oats seem to be a favorite, so we are always on the search for more.
Here’s one that we think you all may like!
Coconut Beet Overnight Oats
- 1/2 cup old fashioned oats
- 1 tbsp. chia seeds
- 1/2 cup water
- 1/4 cup full fat coconut milk
- 1 beet, cooked & peeled
- 1/2-inch ginger piece peeled
- 1/2 pomegranate, seeds only
- 1/2 tsp. pure maple syrup
- 3 tbsp unsweetened coconut flakes
- 1 ½ tbsp hemp or sunflower seeds
- In a lidded jar, add the oats and chia seeds.
- Add the coconut milk, water, maple syrup, coconut flakes and mix.
- Lid the jar and let it sit overnight in the refrigerator.
- In the morning, blend the beets, pomegranate seeds, and ginger in a blender. Pour mixture through strainer so that you are only getting the liquid and mix liquid in with the oats.
- Garnish with hemp or sunflower seeds and enjoy!
